Basil Lemon Drop Poptails

Ingredients

Popsicles:

  • Santa Cruz Organic Lemonade

Basil Simple Syrup:

  • 2 cups water

  • 2 cups white sugar

  • 2 cups fresh basil leaves

Basil Lemon Drop:

  • 2 cups vodka

  • 1 cup Santa Cruz Organic 100% Pure Lemon Juice

  • 1 cup basil simple syrup

  • 1 liter seltzer water

Garnish:

  • Lemonade popsicles

  • Lemon slices

  • Basil Leaves

Directions

Freeze lemonade in popsicle maker overnight. Chill all drink ingredients.

Make basil simple syrup: combine water and sugar in a medium pan and bring to a boil. Add in basil leaves and let simmer for one minute. Turn off heat and let steep for 30 minutes then strain into a glass jar. Refrigerate until ready to use.

Make the cocktails: In your favorite pitcher, combine vodka, lemon juice, simple syrup, seltzer water, lemon slices and basil leaves. Stir to combine. Pour into glasses and garnish each one with a lemonade popsicle.

Tip: Make it a mocktail by leaving out the vodka!
