Lemon Ginger Sparkler

Lemon Ginger Sparkler Cocktail

Ingredients

Ginger Syrup:

  • 1/2 cup finely chopped fresh ginger

  • 1/2 cup sugar

  • 1/4 cup water

Mocktail:

  • 6 cups water

  • 6 Earl Grey tea bags

  • 3/4 cup ginger syrup

  • 1/3 cup Santa Cruz Organic 100% Pure Lemon Juice

  • 6 cups ginger ale

  • Ice

  • Fresh rosemary and lemon leaves for garnish

Directions

Make the ginger syrup. Wash fresh ginger, trim off any dry or discolored pieces then chop into small pieces. Measure 1/2 cup of the finely chopped ginger and add to a high speed blender cup, add in the sugar and water and blend until liquified. Transfer to a sealable container and refrigerate for 2-4 hours. Strain through an ultra-fine mesh strainer or nut milk bag to remove solids. Refrigerate syrup until ready to use.

Make the tea. Place 6 Earl Grey tea bags in a large, heat proof pitcher. Boil 6 cups of water and pour over tea bags. Let steep for 5 minutes then remove the tea bags and place tea in refrigerator until fully chilled. 

Make the mocktail. In a large pitcher combine brewed tea, ginger syrup and lemon juice and stir to combine. Place ice in glasses and fill halfway with lemon ginger tea mixture, top with ginger ale. Garnish with a rosemary sprig and a slice of lemon. Enjoy!

Make this a cocktail by adding a 1/2 oz of your favorite whiskey to your glass!
